Simple Fluffy Pancakes

These are great any-morning pancake that kids and grownups will equally enjoy.

Recipe makes approximately 10 medium-sized pancakes.

Ingredients:

  • 1/4 C whole milk yogurt
  • 3/4 C whole milk
  • 1 egg
  • 1 C whole wheat flour
  • 1T brown sugar
  • 1/4 teaspoon salt
  • 2 teaspoons baking powder

Method:

  • Combine yogurt, milk and egg in a medium mixing bowl.
  • Whisk well.
  • Add flour, brown sugar, salt and baking powder.
  • Mix well.
  • Heat buttered or greased griddle or frying pan to medium heat.
  • Pour batter into desired-size circles and cook until bubbles form.
  • Flip.
  • Cook other side for about a minute more.
