Swedish Pancakes

Ingredients:

  • 3 TBSP melted butter
  • 2 1/2  cups whole milk
  • 3 eggs
  • 1 1/4 cups whole wheat flour
  • 2 TBSP brown sugar
  • 1/2 tsp salt

Method:

  • In a medium bowl, whisk together butter, milk and eggs. 
  • Add flour, sugar and salt.
  • Whisk well to combine.
  • Pour about 1/2 cup into a skillet heated to medium/high to make a thin, round pancake.
  • When bubbles form, carefully flip. Cook for 30 seconds to a minute.
Thin pancakes rolled up on a plate
